You are a skilled culinary professional responsible for managing your assigned kitchen section and ensuring the consistent preparation and presentation of high-quality dishes. As a Demi Chef de Partie, you support the Chef de Partie and kitchen leadership team in maintaining operational excellence, upholding food quality standards, and fostering a positive and productive kitchen environment. Your expertise in both Western and Asian cuisine enables you to contribute to a diverse and dynamic culinary offering that exceeds guest expectations.
Food Preparation & Production
- Prepare, season, cook, and present dishes according to established recipes, menu specifications, and quality standards.
- Ensure consistency in taste, portioning, presentation, and food quality.
- Demonstrate proficiency in preparing a variety of Western and Asian dishes using appropriate cooking methods and techniques.
Kitchen Operations
- Manage and organize the assigned kitchen section to ensure smooth and efficient operations.
- Support the Chef de Partie/Sous Chef and provide guidance to Commis Chefs and kitchen assistants as required.
- Assist with mise en place preparation and ensure readiness for service periods.
Food Quality & Safety
- Maintain a clean, organized, and hygienic work environment at all times.
- Ensure compliance with HACCP, food safety, sanitation, and personal hygiene standards.
- Monitor ingredient quality and ensure proper food storage, handling, labeling, and stock rotation practices (FIFO).
Cost Control & Inventory Management
- Assist in controlling food costs by minimizing waste and maximizing product utilization.
- Monitor stock levels and report shortages or discrepancies to the Chef de Partie/Sous Chef.
- Support inventory management and receiving procedures according to company standards.
Team Support & Development
- Collaborate effectively with kitchen team members to achieve operational and service excellence.
- Support training and development of junior kitchen staff.
- Foster a positive working environment through teamwork, professionalism, and effective communication.
Compliance & Standards
- Ensure compliance with company policies, health and safety regulations, and operational procedures.
- Maintain the highest standards of food quality, guest satisfaction, and workplace safety.
Education & Experience
- Minimum SPM, High School Certificate, Culinary Certificate, Diploma, or equivalent qualification in Culinary Arts or a related field.
- Minimum 3 years of culinary experience in a 5-star hotel, upscale restaurant, or similar establishment.
- At least 1 year of experience as a Demi Chef de Partie, Commis I, or equivalent role within an international hotel brand or reputable food service operation.
- Formal culinary training or technical culinary education is preferred.
Knowledge & Skills (Mandatory)
- Strong knowledge and practical experience in both Western and Asian cuisine is mandatory.
- Ability to prepare, cook, and present a wide range of Western and Asian dishes using various cooking techniques, including grilling, roasting, sautéing, braising, steaming, stir-frying, and deep-frying.
- Knowledge of international culinary standards, food presentation, and menu preparation.
- Knowledge of seafood, poultry, meat, and vegetable preparation techniques.
- Understanding of food receiving, storage, stock rotation (FIFO), and inventory control procedures.
- Familiarity with HACCP principles, local food safety regulations, and kitchen sanitation standards.
