Job Description

  • State Executive Sous Chef opportunity - Adelaide based
  • Drive culinary excellence and commercial performance across our South Australia venues
  • Based in Adelaide with some intrastate travel required - tool of trade vehicle provided

As the State Executive Sous Chef, you will contribute to the development of the National ALH Food Strategy and execution of this within your state portfolio.

You’ll be responsible for improving food standards and food sales in South Australia through the development and support of our Head Chefs on their food offer, and prioritisation of opportunities related to food in our business.

Here is a taster of what you can expect in this role:

  • Drive menu innovation by collaborating with Executive Chefs to create seasonal, market-leading menus and state promotional calendars.
  • Optimise commercial performance across venues, taking ownership of gross profit, sales, back-of-house labour, and operational productivity.
  • Champion food safety standards by conducting venue audits, driving HACCP compliance, and leading continuous improvement using Squizify.
  • Lead succession planning and leadership development, actively supporting Head Chef recruitment, onboarding, and apprentice training programmes.
  • Manage supplier relationships alongside procurement teams to ensure product consistency, allergen mapping accuracy, and menu cost-efficiency.
  • Conduct hands-on launches including venue cook-offs, recipe validation, and day-to-day kitchen reviews to maintain culinary standards.
  • Advocate kitchen safety and team wellbeing, overseeing return-to-work programmes, incident reporting, and safe working practices.
  • Assess venue equipment and prepare clear business cases for kitchen upgrades to enhance efficiency and care.

Qualifications

Now let’s talk about you:

  • Trade qualified chef with a current Driver's Licence and relevant commercial food safety and HACCP certifications.
  • Proven multi-site experience managing high-volume kitchen operations ideally across pubs.
  • Exceptional business acumen with a track record of driving GP, managing labour metrics, and achieving commercial targets.
  • Inspiring people leader with strong strengths in coaching Head Chefs, guiding trainees, and building team capability.
  • Skilled menu developer with deep knowledge of modern food trends, cooking practices, and recipe costing.
  • Strong stakeholder communicator with excellent time management skills and intermediate digital literacy.
