Lead a Venue Locals Love.

AC Hotel Gold Coast is seeking an energetic, commercially minded, and people-focused Venue Manager to lead one of the city's most exciting food and beverage destinations.

This is more than an operational leadership role. We're looking for someone who knows how to create buzz, build loyal local followings, inspire exceptional teams, and deliver memorable guest experiences that keep people coming back.

You'll be responsible for creating an atmosphere that attracts both hotel guests and Gold Coast locals, turning the venue into a go-to destination for dining, socialising, and celebrating.

What You'll Do

Create a Destination Venue

  • Champion initiatives that drive local patronage, repeat visitation, and venue loyalty.

  • Build the venue's reputation as a must-visit Gold Coast dining and social destination.

  • Partner with Marketing, Events, and Commercial teams to create experiences, activations, and promotions that increase awareness and revenue.

  • Stay ahead of market trends and competitor activity to ensure the venue remains fresh, relevant, and highly sought after.

  • Build strong relationships with local businesses, community groups, and industry stakeholders.

Lead Exceptional Guest Experiences

  • Create a guest-first culture where service consistently exceeds expectations.

  • Be a visible and engaged leader on the floor, connecting with guests and team members alike.

  • Lead service recovery efforts and turn challenges into positive guest experiences.

  • Review guest feedback, identify opportunities, and drive continuous improvement.

  • Foster an environment that encourages memorable, personalised hospitality.

Inspire and Develop Great People

  • Lead, coach, and mentor a passionate team of hospitality professionals.

  • Build a culture based on trust, respect, accountability, and collaboration.

  • Recruit, develop, and retain exceptional talent.

  • Support career growth through coaching, feedback, and succession planning.

  • Recognise achievements and celebrate success across the team.

Drive Operational Excellence

  • Oversee the day-to-day operation of all Food & Beverage outlets.

  • Ensure Marriott brand standards, policies, and compliance requirements are consistently achieved.

  • Manage labour, inventory, expenses, and departmental resources effectively.

  • Monitor financial performance and identify opportunities to improve profitability.

  • Maintain high standards of cleanliness, safety, presentation, and operational execution across all areas.

What We're Looking For

  • A proven hospitality leader with a passion for food, beverage, and guest experience.

  • Experience leading successful restaurants, bars, venues, hotels, or lifestyle hospitality operations.

  • Strong people leadership skills with the ability to engage, coach, and motivate diverse teams.

  • Commercial awareness and a track record of driving patronage, revenue growth, and operational performance.

  • Excellent communication, relationship-building, and problem-solving skills.

  • A hands-on leadership style with a willingness to be present in the operation and support the team when needed.

  • Strong understanding of financial management, budgeting, compliance, food safety, and workplace health and safety requirements.

Qualifications & Experience

  • Minimum of 5 years' progressive experience in Food & Beverage, Hospitality, Culinary Operations, or a related field; and High School Diploma or equivalent

OR

  • minimum of 3 years' relevant experience in leadership positions or a tertiary qualification in Hospitality Management, Hotel & Restaurant Management, Business Administration, Food Service Management, or a related discipline

The successful candidate must have unrestricted working rights in Australia for a minimum of two years and be available to work a flexible roster, including evenings, weekends, and public holidays as required.
