OVERVIEW AND PURPOSE OF YOUR ROLE

As a Night Kitchen Steward, you play a vital support role in maintaining the cleanliness, hygiene, and operational efficiency of the kitchen and back-of-house areas.

You are responsible for ensuring all kitchen equipment, utensils, and work areas are cleaned, sanitised, and maintained to the highest hygiene standards, supporting the kitchen team in delivering smooth and safe service.

ROLE RESPONSIBILITIES

1 Cleaning & Sanitation

Clean and sanitise all kitchen equipment, utensils, and surfaces

Maintain cleanliness of kitchen floors, drains, and waste areas

Ensure dishwashing areas are kept clean and operational

Follow hygiene and sanitation schedules strictly

Support deep cleaning routines and kitchen closing procedures.

2 Equipment Handling

Operate dishwashing machines safely and efficiently

Handle kitchen tools, trays, and equipment with care

Report any damaged or faulty equipment immediately

Ensure equipment is stored correctly after cleaning.

3 Food Safety & Hygiene

Follow all food safety and hygiene standards at all times

Maintain proper segregation of clean and dirty items

Ensure correct use of cleaning chemicals and materials

Support HACCP compliance within stewarding areas

Maintain safe and hazard-free working environment

4 Waste managment

Collect and dispose of kitchen waste correctly

Ensure proper segregation of waste (general, food, recycling)

Maintain cleanliness of waste storage areas

Support waste reduction practices where possible

Report overflow or waste issues promptly. Report damaged or missing items

5 Kitchen Support

Assist chefs with basic operational support when required

Deliver clean equipment and utensils promptly to kitchen sections

Support during busy service periods with quick turnaround cleaning

Assist in receiving and storing deliveries when required

Maintain readiness of clean equipment for service operations. Follow portion control instructions

Qualifications

No formal qualification required; culinary certificate is an advantage

·

Fluet Arabic and English speaker (other languages preferred but not essential)

Experience

·

Previous experience in stewarding, cleaning, or hospitality environment is an advantage

·

No experience required for entry-level candidates

Professional Skills & Attributes

Basic understanding of hygiene and cleanliness standards

Ability to follow instructions carefully
